There are two kinds of people in the world: those who like bacon, and those who are best put out to pasture when the Zombie Apocalypse lands. This is a story about bacon. Because bacon makes everything better. ERRYTHING. Even food trucks and shipping containers. B’coz Bacon. 90% of the world’s problems can be cured with bacon. FACT. Bacon is absolutely the greatest invention humans have found – better than fire, milk, eggs or bread combined; even though that would be a wonderful breakfast. Bacon is the antidote to everything, from hangovers to hunger and heartbreak.

And Brisbane bacon boy Liam Gardner intends to spread the rasher love with brand new food business B’coz Bacon. The new food concept brings everything bacon wrapped, inclined, themed, tasting and texture to the lanes and lines of Brisbane. Keeping things simple but fast, B’coz Bacon are committed to using unique cooking techniques while presenting the harmony of bacon to the people, for the people. Perfecting flavour combinations since October with plenty of bacon testing under their belt, Liam will no doubt be sniffing about the few wonderful piggeries nearby.

Their menu - though concise - is currently offering up some rather on point dishes. Nothing says ‘gorge on my cured salty meats’ like The Baby Got BRAT with thick cut (and we mean thick – may as well call it steak-on) bacon coated in Japanese-inspired Panko breadcrumbs served on sourdough with rocket, avocado, tomato and mayo.

And then there’s The Kevin Burger: a beef patty infused with bacon, served with lettuce, tomato, pickles, bacon, cheese, caramelised onions and special sauce on a brioche bun. Now that’s just uber bacon. The BRAT and the Burger also come served with hand cut chips, coated in a herb, parmesan and bacon dust mixture.

While Liam is still in the process of constructing his mobile shipping container with The Box Brand, bacon dates can be expected to pop up across the South East in no time and sure to trickle down to Sydney and Melbourne. Here’s to hoping popcorn, slaw, kraut, sausages, reubens, butter, quiches, pastas, nuts, pizzas, meatballs, gravies, dips, muffins, vinaigrettes, salads, burritos, quesadillas, sweets, pancakes, oatmeals and bloody marys make their way onto the menu too. That's bacon thinking.
